Spatchcocking involves removing the backbone of a whole chicken and then flattening it out. This method allows for more even cooking and can reduce the cooking time. It's a popular technique for grilling and roasting.  Spatchcock chicken is a fantastic method for achieving a perfectly cooked, flavorful, and visually appealing dish. Key characteristics of a spatchcock chicken:

  • Even Cooking- Flattening the chicken ensures that all parts cook at the same rate, preventing the breasts from drying out while the thighs and legs finish cooking.
  • Presentation - A spatchcocked chicken lays flat and can be an impressive centerpiece for serving, especially when beautifully roasted or grilled.
  • Flavour Infusion: With more surface area exposed, marinades and rubs can penetrate better, enhancing the flavour throughout the chicken.

Cooking tips - Preheat your oven or grill Ensure your cooking surface is hot before adding the chicken to achieve the best results. Use a meat thermometer to check the internal temperature in the thickest part of the thigh to ensure the chicken is fully cooked to 74'C. Rest the chicken  allow the chicken to rest for about 10 minutes after cooking to let the juices redistribute before carving.
