Cooking Tips: Create a classic herb rub by mixing minced garlic, chopped rosemary, thyme, and parsley with olive oil, sea salt, and freshly ground black pepper. Rub this mixture generously over the entire shoulder, ensuring it is well-coated. For added flavour, insert slivers of garlic into small incisions made in the meat.

Perfect Roast:

Searing: Preheat your oven to 220°C (430°F). Heat a large oven-proof pan over medium-high heat and sear the lamb shoulder on all sides until browned, about 3-4 minutes per side. This step locks in the juices and enhances the flavour.

Slow Roasting: Reduce the oven temperature to 160°C (320°F). Place the seared shoulder on a rack in a roasting pan. Add a bed of roughly chopped onions, carrots, and celery beneath the lamb. Pour in a cup of chicken or lamb broth. Cover the pan with foil or a lid and roast for 3.5 to 4 hours, basting occasionally, until the meat is tender and falls off the bone.
